I didn't consume alcohol during this period and I will make sure to avoid it. My AST and bilirubin levels in my last test were very normal. Could this be Mononucleosis or HCV?

If HCV antibodies are negative than it is not Hepatitis C. If you are suspecting that you have infectious mononucleosis symptoms (fever, severe sore throat, anorexia, dull abdominal pain) then the best way to find out is to test for it, although I have to tell you it is a benign self-limited disease and if indeed you have contracted it, your body will clear it on its own.
